«Tula Gorgonzola», «Lipetsk Parmesan», «Saratov bree» — four years ago this phrase sounded funny. After introduction of food embargo of the Russian shelves has virtually disappeared, all foreign cheeses are considered the standard, but domestic manufacturers have proved that in Russia it is possible to make high-quality cheese. About how managed to do it, in the report by RIA Novosti.

Moscow is hosting the fair, «Cheese days.» For two weeks, from 22 September to 8 October in the capital was attended by cheese-makers from Russian regions.
«We produce 12 tonnes of cheese a month — six tons of white and blue mold», — says commercial Director of the Tula complex «Nenashev» Alex Malofeev.

The company launched production in 2016. And if the majority of the cheese spetsializiruyutsya on durum, «Nenashev» makes the product with noble rot. Cheese-makers actively use the European technology, the production control specialist from Lyon, using only French sourdough. «In Russia there is simply no quality enzymes, says Malofeyev. — But work in this direction». The names of the cheeses are also given in French: thus, according to the specialist, you can win the favor of the buyer and to show him that «we can’t worse.»

Similar fairs for cheesemakers sometimes the only way to Express yourself. In 2016, «Cheese days» was attended by 56 productions. In three days they sold 60 tons of cheese. This year the stands are very different companies: from an experimental dairy farms of the Saratov kind of Miss Milk, which for the past eight years on the market, to startups like Moscow «Cheese land», introduced in 2016.

Cheese-makers in one voice say about the beneficial effects of bradenburg: foreign companies are gone, «cheese» niche is practically empty, the market revived, and small firms have the opportunity to enter the market.

The head of the cheese makers Union of Russia Oleg Sirota hopes that the sanctions will last at least 7-10 years. According to him, this is the only way to stimulate production in Russia: to cancel the counter now — and many startups simply do not survive. Russia due to WTO requirements may not introduce a duty to support their companies, says Sirota. Europe is actively using this system: for example, duties on Russian vegetables and fruits in Germany is 300% of their value, and the price of import of a kilogram of cheese is two euros.

Due to Russian counter-sanctions, an Orphan was able to achieve his dream — to become a cheesemaker. He quit his job of the programmer and found the native land in the Istra district. After studying production in Germany and Switzerland, Oleg has sold the property, got into debt and 7 August 2015 started a cheese factory.

For two years he lived in the barracks, trying to put the production on the rails: a crowdfunding campaign has brought him 800 orders, and six million rubles. «I started to work, but winter came the real dairy disaster — have problems with raw materials, — says the Orphan. — I had two options: either to offer customers to wait until summer, because then the milk will be much better, or return all the money. I was ready to take a loan — only to return people debts.» The money was taken away a total of eight people, the other was supported by Oleg.

Contractee work well for domestic producers, however, another problem arises: today Russian farmers severely hit smuggling, it would seem, left the market for Western goods. «Here it is necessary or so to lift the sanctions, or to start normally to fight it,» — says Oleg Orphan. According to him, now Russia has its own manufacturer: in the near future, runs about 20 large plants for the production of brie and Camembert, which, according to Orphans, literally «flood» the Russian supermarkets and cheese.

In Istra the dairy employs 30 people: they work on the farm and in the barn. The plans — delivery not only in Moscow and St. Petersburg, but also in regions of Russia — from Sochi to Voronezh. Oleg did not pay the debts in his words, the farmer becomes rich only when a sells his farm, which in terms of financial costs — «a real death star». Now the factory is working almost around the clock. By the end of the year Oleg intends to produce up to one ton of cheese per day, processing 100 tons of milk. «Time for us to lose, and then suddenly the sanctions will be lifted», — said Oleg.
